So I never intended on sharing recipes on this blog. It has always been for personal thoughts and Client sessions. However, cooking is one of my great hobbies (second to eating.) I love reading recipe books, and I also have a passion for healthy food. I don't eat wheat which adds more to the game. Therefore I pride myself on finding and adapting recipes to be wheat free. So I was thinking, why not share them here. If you make them, please let me know!
Coconut flour is something someone put me onto a while back to be truthful, I haven't used much of it. BUT, I know it's capable of great things and it has an array of health benefits. These muffins utilise it and come together in around 3 minutes. Pop them in the oven for 15-20 minutes and you have yourself a tasty, healthy, wheat-free afternoon snack. Perfect alongside milky tea. Or coffee. Or whatever you want. Hell, I've eaten one of these for breakfast on the run. I haven't played with any additions aside from chocolate chips but next time I make these bad boys I'm going to add raspberries or strawberries. Fancy.
1/4 cup coconut flour
1/4 cup cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon of rock salt
3 whole eggs
1/3 cup maple syrup
Handful of dark chocolate chips (or if you're feeling real fancy, roughly chopped dark chocolate)
1. Preheat oven to 175 degrees Celcius
2. Combine the dry ingredients in a medium bowl with a whisk
3. Add the eggs and maple syrup and whisk to combine until batter is smooth
4. Fold in chocolate chips
5. Bake in the oven for 15-20 minutes (depending on muffin size) or until a skewer comes out clean
Note: makes around 6 medium muffins, could make 4 bigger ones.
Note 2 : eat one fresh out of the oven, go on. The world can agree that chocolate chip muffins are way better when the chocolate chips are gooey.
Aside from whipping up a few batches of these, my weekend revolved around picking which market to attend and where to get afternoon coffee. I can't complain, it was glorious. To really top things off, this weather has been impeccable and the very reason I got up early to walk to the shops this morning to buy one sole mango. Spring, maybe my favourite season of them all? I can never pick.
